Diabetic Patients are prone to Oxidative Stress more. It damages the cells and tissues in the body. Research reports that it kills the insulin producing beta cells in the pancreas too. To fight with the Oxidative stress, antioxidants are to be taken in diet. Artichoke vegetable is one such food item which the diabetic patients can take as antioxidants.

What is Oxidative Stress ?
- We breathe air. The lung separates Oxygen from other unwanted gases.
- This process of separation, involves many chemical reactions.
- Several toxins are released in the body due to the reactions.
- They are called Reactive Oxygen Species (ROS).
- They are generally kept in check and get out of our body with the air we breathe out.
- But when the body fails to keep these toxins in check, the condition is called Oxidative Stress.
A Study was conducted in July 2006 on 1,113 Foods Items and Beverages commonly consumed in United States. The objective of the study was to rank these food items based on the presence of antioxidants present in them. Artichoke was found to possess 3.559 mmol of antioxidants per serving. It ranked fourth among the listed antioxidant food items.
Benefits of Artichoke:

- It is probably because of the high antioxidants present in it.
- They fight against the oxidative stress and protect the beta cells in the pancreas from committing suicides.
