Oatmeal Raisin Cookies

In oatmeal raisin cookies always prefer lighter whole-wheat pastry flour when you prepare delicate recipes. Slash the amount of sugar to half or you can also add a sweetener like agave nectar, in place of brown sugar which you can use in smaller amounts which will help in maintaining the same flavor.

Oatmeal Raisin Cookies

Ingredients:

  • ¾ cup canola oil
  • 2 tsp pure vanilla extract
  • 2 cups flaked oats
  • 2 eggs, lightly beaten
  • 1 cup honey or agave nectar
  • ½ cup powdered fat-free milk
  • 1½ cups wheat germ
  • ¾ cup whole-wheat pastry flour
  • ½ cup toasted chopped walnuts
  • ½ cup raisins

Preparation Method:

  • The initial step is to preheat oven to 350°F.
  • With the help of parchment paper or silicone baking sheets line two large baking sheets.
  • Next step would be to mix the canola oil, lightly beaten eggs, honey, chopped walnuts, rolled oats, vanilla extract, raisins and wheat germ together in a large bowl.
  • Sift both flour and powdered milk together and keep it aside.
  • Now you need to stir the dry ingredients into the wet ingredients up till well-combined.
  • Scoop spoonfuls of the prepared cookie dough and spread onto the prepared baking sheets.
  • Bake the cookies for 10-12 minutes or until dry around the edges.
  • Finally cool on a wire rack and store oatmeal raisin cookies in an airtight container in the refrigerator.
